CALI CHEESESTEAK PIZZA

Homemade dough smeared with horseradish cheddar sauce (CA beer, cheddar, horseradish, worcestershire, dijon, white pepper, etc), topped with caramelized onion, Anaheim peppers, and mushrooms, all sautéed in a little bacon fat (bacon goes on too), grilled tri-tip steak (a cut most common to the west coast), finished with Monterrey Jack, and drizzled with garlic-parsley oil or black truffle oil (hard to pick a favorite).

* Philly cheesesteak is my favorite sandwich. Given the option, I always order it. So this CA-inspired take was fitting and fun!
